    Abby & More: A Light Dinner

    Are you thinking about a new meal to try for dinner?

    What about Skinny Bruschetta Chicken?

    This meal is easy to prepare and is perfect for these warm, summer nights.

    Ingredients needed:

    • chicken breasts
    • 4 or 5 chopped tomatoes
    • 1 minced garlic clove
    • 1 tsp. of olive oil
    • 1 tsp. of balsamic vinegar
    • 1/8 tsp. of sea salt
    •  1 handful of chopped basil


    You can grill, bake or heat your chicken breasts on the skillet.

    If you choose to bake in the oven, preheat to 375 degrees F. Sprinkle salt and pepper on the chicken (or marinate how you wish), cover and bake for 35 to 40 minutes.

    While the chicken is being cooked, combine the chopped tomatoes, garlic, olive oil, balsamic vinegar, sea salt and basil in a bowl. After mixing, refrigerate until the chicken is done.

    Finally, apply the mixture on top of the chicken when ready to eat.


    If you are interested in adding side dishes to this meal, the Bruschetta Chicken can be enjoyed with a fresh salad, fruit or side veggies.
