Salads are a great, healthy meal. Plus, even better, there are so many types of salads out there to try.
Today, why don’t you try the chickpea, tomatoes and spinach salad:
There is so much more to this salad than chickpeas, tomatoes and spinach.
- 2 cups (400 g) of cooked chickpeas
- 1 cup of rinsed baby spinach leaves
- 5 chopped spring onions
- 5 medium, chopped tomatoes
- 1 chopped red pepper
- 1/3 cup of chopped parsley
- 1 tbsp of balsamic vinegar
- 1/2 of lemon, juice
- 2 tbsp of olive oil
- 2 tbsp of sesame seeds
- 2 tbsp of flax seeds
- optional: 1/2 of a hot pepper, thinly sliced
Make sure all vegetables are cleaned and chopped; then, add to a mixing bowl with the baby spinach leaves.
Next, sprinkle the sesame and flax seeds.
Following, add the balsamic vinegar, olive oil and lemon juice.
Toss and mix everything well.
Finally, add salt and/or pepper to taste.
